Stuffed Prawns

Recipe from my great friend chef Klime Kovaceski.

 

Stuffed Prawns

3 each 6/8 Prawns, head-on

6 ounces goat cheese

4 ounces gnocchi

Salt and pepper to taste

Lemon, olive oil

 

1. De-vein 3 U-7 shrimp and clean out head where brain-sack is located. 

2.       Season Shrimp and pack with goat cheese. 

3.        Blanch leeks.  Set aside.  Wrap prawns with soft leeks.  Sear in a hot pan with olive oil until golden brown. 

4.       Sear about 4 oz. of Gnocchi in a hot pan with olive oil until golden brown. 

5.        Season gnocchi with salt and pepper and white truffle before serving
